In order to deliver the fish to Kyoto, people put salt on mackerels at the harbour in Fukuoka prefecture and made them into sushi.
Since then the mackerel sushi became popular and now it's a famous and traditional Kyoto food that people love to eat for special occasions such as ceremonies.
The grilled mackerel sushi was burn as a result of seeking more tasty sushi.
To grill sushi rids the fish of its smell and adds a good flavour which is why the grilled sushi gets very popular for children and foreign people. Many people ask for seconds.
